Denise I needed to add this to the Mexican food file, it's spicy, you might like it.

Don't let the sweet potato fool you, this isn't a sweet dish. I'm a

chickenremember? I pull mine out before I add the jalapeno peppers. It's a

heartydish and you can change it all around to suit your taste buds. " Painted

Desert Hash " 3-4 cups sweet potatoes peeled and diced1 1/2 tblspns canola or

olive oil1 cup chopped onions2 zucchini's diced1 cup corn fresh or frozen1 cup

red, yellow, orange or green peppers diced or thinly sliced1/4 cup diced

jalapeno peppers1/2 cup green onions thinly sliced2-3 cloves of garlic minced1/3

cup fresh cilantro chopped1 tsp. chili powder1 tsp. cumin ground1 tsp salt*

option you can also add peas or celery or chopped spinach. Adjust yourspices

also if you like this dish hotter or mild.In large skillet or dutch onion saute

sweet potato 5-7 minutes. You can addwater also after a few minutes if needed so

it doesn't stick.Add onion and saute another 5 minutes.Add zucchini, corn, sweet

peppers, jalapeno peppers and saute another 5minutes.Add green onions and

garlic and saute 3 more minutes.Add remaining ingredients and cook 2-3 more

minutes. This will blend thespices.Serve as a side dish, as tortilla wraps, as a

chunky dip, enchilada filling,etc.
