I've noticed their recipes really seem to be short on spices. This served two hungry people with a bit left over to be placed in a tortilla for lunch. 3 Tbs oil 1 large sweet potatoe, peeled and cubed 1 medium onion, chopped 2-3 cloves of garlic, crushed or chopped 1 cup corn 6 oz soy grounds (or TVP) 1 tsp chili powder 1/2 tsp celery salt 1/2 tsp marjoram fresh ground pepper fresh ground salt 4 eggs 1 Tbs butter Saute on medium heat the onion and sweet potatoe in 2 tbsp oil for about 10 minutes or until just tender. Add the last tbsp of oil, garlic, corn, grounds and spices. Reduce heat to medium low and stir to incorporate, heat through stirring occasionally. If you want, reduce heat to warm and put a lid on while you cook the eggs. Fry two eggs at a time in butter, over-easy or desired doneness. Serve hash on a plate and pile two fried eggs on top.
