This is a quick mini meal for me quite often since I'm on the go.

 

Bell Pepper Bruschetta

 

1 yellow or red or orange bell pepper

2 sprigs of thyme, chop

3 tbs. olive oil

1 tbs. capers

6 sundried tomatoes in oil

salt and pepper to taste

12 slices baguette

 

Remove seeds, ribs and stem from bell pepper and dice finely.

I like to make this dish colorful so I use 1/2 red and 1/2 orange peppers or

even some yellow pepper.

Saute chopped thyme and bell pepper in oil over medium heat for 5 minutes.

Rinse capers and chop finely.

Dice tomatoes, combine all ingredients and season with salt and pepper.

Toast bread and top with mixture.
