" Fava Bean and Garlic Crostini "

 

2/3 cup fresh, frozen or cooked fava beans

1 tomato, diced

Few sprigs of basil, parsley or cilantro chopped

2 Tblspns. olive oil

1/2 Tblspn. flavored vinegar

2 chopped green onions

1 garlic clove minced

Dash of black pepper and red pepper flakes

 

Remove outer and inner skins from fava beans and cook in boiling water 8

minutes. Drain and cool.

Place all ingredients in bowl and mix. Chill for a few hours to blend flavors.

Serve on crisp toast, on top of pita chips, or use as a dip.
