Miso Soup Lite Vegetable Version recipe

This is a good simple version I make often.

 

Miso Soup Lite Vegetable Version

 

6 to 7 cups water

1/2 cup carrot very thinly sliced

1 nappa or regular cabbage leaf chopped

1 small onion chopped

1 tsp. sesame or regular oil

5 tsps. miso paste ( add more if you desire but taste broth first)

2 tsps. tahini (optional)

1 1/2 inch strip of kombu seaweed (optional)

 

 

Saute carrot, onion and cabbage in oil for 5 minutes in saucepan. Add water,

miso, tahini, kombu and bring to a boil. Reduce heat and simmer for 20 minutes.

Serve in small bowls with sliced green onion tops.
