Black Eyed Onion Caviar 1 cup diced onions 8 ounces blackeye peas, cooked 1 small can diced pimento 1 cup bell peppers, diced 1/2 cup green onion 1 ounce fresh garlic, chopped 1/4 cup fresh jalapeno chopped (optional) 1/4 cup Italian dressing salt and pepper to taste Combine all items. Let marinate overnight to blend the flavors. Serve as side dish or as appetizer with pita chips or crackers or spread on bread. Injustice anywhere is a threat to justice everywhere. Thanks for the recipe, most of my cookbooks are still in storage, so I am happy to have this one for fall parties at church!
