blackbean quesadillas Hey CHanda

I made these tonight. They are good and easy.

I added chopped serrano peppers to mine.

Sounds yummy, Chandra!

I am not very good at making quesadillas that way, I tend to drop them as

I'm turning them, and all the ingredients fall out and I then get very

upset!

So I take a shortcut: I heat my skillet up with about 3 T. olive oil, put

in the tortilla, count to 15 by Mississippi's (lol), flip the tortilla over,

and dollop the beans, tomatoes, black olives, green chiles and whatever else

onto half of the tortilla's surface, and then sprinkle the cheese on top.

Then, with a very sturdy spatula, I get under the blank half of the tortilla

and flip it over on top of the filled half. I mash the top half with the

spatula about five or ten seconds just to make it stick good to the bottom

part. Then I cook for another five seconds or so, and THEN turn the

quesadilla over, cooking it about ten seconds on the other side. I lift it

out to drain thoroughly on paper towels, and even gently press the top of

the quesadilla with paper towels to get as much grease out as possible. Then

serve hot, with Pace picante sauce! " the babyfood of Texans! " LOL.
