Chanda, your recipe for the black bean quesadillas sounds so good. i never would have thought to use a can of black bean soup. How wonderfully quick and easy this meal will be on a busy day. Thank you. I never would have thought to use it either, LOL, but so glad I did because it made the refried beans spreadable. All the omnivores liked it the day after too. Gonna have them tomorrow to use up the rest of the leftovers. I got the whole wheat tortillas, wonder if they are gonna fly. I found a great method for making " unrefried beans " . You take a can of black or pinto beans, drain and wash them and drain again, and then put them with about 1/4 c. water into your blender. Add some cooked onions and garlic if so disposed, or if you're lazy <g> add onion powder and garlic powder. Blend on High till the consistency of paste, i.e., canned refrieds. Take out and use or refrigerate. No grease, no fat, no trouble!
