i'm really behind here in my post reading; this

group moves fast! *lol* But Sunday morning is here,

and i have some quiet time to enjoy my saved

digests. :)

Chanda, your recipe for the black bean quesadillas

sounds so good. i never would have thought to use

a can of black bean soup. How wonderfully quick

and easy this meal will be on a busy day. Thank you.

What brand of soup did you use?

For now, the corn house filled, the harvest home,

Th' invited neighbors to the husking come;

A frolic scene, where work and mirth and play

Unite their charms to cheer the hours away.

Hey PT,

I used the store brand.

I never would have thought to use it either, LOL, but so glad I did because it

made the refried beans spreadable. All the omnivores liked it the day after too.

Gonna have them tomorrow to use up the rest of the leftovers. I got the whole

wheat tortillas, wonder if they are gonna fly.

Blessings,

Chanda

Y'all know what? In a little paperback cookbook called " Beans " (real

original, right?) I found a great method for making " unrefried beans " . You

take a can of black or pinto beans, drain and wash them and drain again, and

then put them with about 1/4 c. water into your blender. Add some cooked

onions and garlic if so disposed, or if you're lazy <g> add onion powder and

garlic powder. Blend on High till the consistency of paste, i.e., canned

refrieds. Take out and use or refrigerate.

No grease, no fat, no trouble!

I do this all the time. :>)
