Sweet and Natural by Meredith McCarty .. this book has a great section breaking down sweeteners as well as other ingredients! Look for it at your library! =) oh... it also has some great recipes! =) just briefly, one reason some are opposed to honey is that it really can't be removed from the hive without soem destruction to the bee home.
