Guest guest Posted November 4, 2005 Report Share Posted November 4, 2005 Well, one ate with me everyday and would sample my lunch, one came down with Aids and wanted to clean up his diet and really feels good now considering his health problems, one had high blood pressure and out of control cholesterol, one was so broke I gave her lunch everyday and packed her doggy bags for dinner for 3 months, one found out she was allergic to milk, 3 were just fascinated and always wanted to become vegetarians but never knew there was anything to eat but salads so I gave them tons of recipes and guided them along and you know what they are all vegetarians to this day. One was a Hispanic woman and I helped her convert her recipes into vegetarian dishes, you know enchiladas, refried beans, tamales with no lard and vegetarian filling,etc. There's been more coworker converts and a few fell off the wagon but these I mentioned above really stick out in my mind. One converted her family and one converted her kids but not ther husband and one converted her roommate. It's like a branch on a tree, isn't it? The best thing I suggest is always offer something tasty and never push them. They will come around. My sister and her husband lived on meat and now they are vegetarians too. My brother-in-law was the worst. I took them with me to a vegetarian dinner with a group of 60 and he made so many rude remarks, I had to kick his damn leg under the table and my sister was skrinking, he finally shut up and now can you imagine this guy being a vegetarian now for 4 yrs. Have you any idea what I would hear from him as he waved his steak in my face for all those years........LOL Chanda, just remember it won't happen overnight but the good thing is, your family tried your food and that's a big step in the right direction. I think your daughter will join you one day soon, she's very close to you and admires and love her you so much, watch and see. I have been working on my friend who lives in the same building as me. She has 2 teen daughters and a young boy. I had them over for veg chilli and corn bread. Now she wants to make it at home. She wants to sample some other stuff I make too. Ihate the thought of it, but it's the only way to keep peace with hubby. I did agree to chicken OR fish rather. I think this may be good because I think my refusal to make him any meat of any kind was making him rebellious. my 17 going on 18 year old asked me if we could have tacos this weekend, he said, " it doesn't have to be with ground beef ma, you can use those refried things you used for the football dip " YAY!!!! now that is a step inthe right direction. I am gonna make some black bean quesadillas tonight.
