It is an old family favorite and my daughter wanted to bake dessert tonight so she put it together. She is 15 years old, and she says anyone can make this. *lol* We enjoy this with a scoop of vanilla ice cream. If vegan use Rice Dream or whatever you enjoy. Tropical Mystery Sift all of these dry ingredients together in one bowl: 3/4 cup sugar 1 cup all-purpose flour 2 tsp baking powder 1/8 tsp salt 1 tsp ground cinnamon 1/2 tsp ground allspice 1/8 tsp ground cloves 1/2 tsp ground nutmeg In a small bowl, combine these next three ingredients: 3 Tbs vegan margarine melted 1/2 cup soy milk 1 tsp vanilla extract Make a well in the dry ingredients and then pour the soy milk mixture into it; blend with a fork until smooth. Pour this into an ungreased 8 inch square baking pan. Mix together this topping and sprinkle over the batter: 1/2 cup brown sugar 1/2 cup sugar 4 Tbs cocoa powder Pour 1 cup of very hot coffee over the top of everything and bake at 350 degrees for 40 to 45 minutes. ~ pt ~ Earth is here so kind, that just tickle her with a hoe and she laughs with a harvest. ~ Douglas Jerrold 1803-1857 Quote Link to comment Share on other sites More sharing options...
