Caramelized Garlic recipe

I can't get enough garlic. I'm lucky my fiance feels the same way.

 

Caramelized Garlic

 

8 or 9 whole garlic cloves

1 tsp. butter or margarine

1/2 tsp. sugar

small pinch of salt

 

Carefully peel the garlic, leaving the cloves unbroken.

Place them in a small saucepan and cover with cold water.

Place the pot over high heat and bring to a boil.

Lower the heat and simmer the garlic for 10-15 minutes,

until it is cooked through and soft but not mushy. Drain.

Heat an 8-inch skillet (iron if you have one) over high heat until very hot.

Add the butter and garlic and saute, tossing continually, for 10 seconds.

Add the sugar and continue stirring until sugar has

caramelized and the garlic is dark golden brown, be careful not to burn it.

I eat this along with dinner or toss the cloves into sweet and sour tofu or top

spinach with them.
