These are wonderful.

 

" Cranberry and White Chocolate Holiday Cookies "

 

1 cup all purpose flour

1/2 tsp. baking powder

dash of salt

1 cup rolled oats

1 stick plus 1 Tblspn. butter

1/2 cup dark brown sugar

1/2 sugar

1 egg

1/2 tsp. vanilla

1/2 cup dried cranberries

1/2 cup roughly chopped pecans

3/4 cup white chocolate chips

 

Preheat oven to 350 degrees.

Combine flour, baking powder, dash of salt, and oats in bowl, mix and set aside.

In another mixing bowl, beat butter and both sugars until creamy.

Add egg and vanilla and blend.

Mix in the dry ingredients, fold in the cranberries, pecans and white chocolate

chips.

Roll tablespoonfuls of dough into balls and place on foil lined cookie sheets.

Flatten each ball with a fork.

Bake for 15 minutes until a pale golden brown.

Transfer to wire rack to cool.

 

Note* You can drizzle icing in a zigzag across the top when cool. Mix 1/2 cup

powdered sugar with a dot of vanilla and enough water to make icing thin enough

to drizzle off end of small spoon.
