suggestions

Hi,

I have a wonderful recipe for Pilau Rice and am looking for

suggestions on what to serve with it. I've always served Curry

dishes with it but clients complain too much about curry. Personally

I love it. Anyway - if anyone has suggestions as to what to serve

with it I'd love to hear them.

Pilau Rice - 25 servings

Hot Veg. Broth 2 quarts

margarine 1 c.

Garlic, minced 1 1/2 Tabl.

cinnamon stick 2

Cardamom couple dashes

Bay leaf

Raisins 3 1/3 c.

Basmati Rice, rinsed & drained 1 1/4 quart

Almonds 2 cups

Heat margarine in a large saucepan and saute the onion and garlic

for 5 minutes. Stir in the cinamon stick, cardamoms and bay leaf and

cook for 2 minutes.

Add rice and cook, stirring for about 2 minutes. Pour in the stock

and add the raisins. Cover the pan and leave to cook gently for

about 15 minutes or until the rice is tender and all the liquid has

been absorbed.

Meanwhile heat a small amount of oil in a wok or frying pan and

brown the almonds. Drain on paper towels. Scatter over rice and

serve.

hmmm... I'd have to taste this to be sure... (and will soon !) but what

about a nice portabella mushroom either as a burger, or just as a

'steak "

 

try marinading in balsamic vinegar, olive oil, garlic.. a little sea

salt,

 

bake in the marinade, and then top with some large tomato slices, some

big red onion slices, maybe some mozzarella (I used soy.. vegan

gourmet) with the tomatoes & onions on top of the cheese...

 

broil to melt the cheese and give it that bubbly burnt look..

Mmmm, I would make a lentil loaf to serve with it. And I'd add

chipotle sauce as the topping, instead of ketchup. I think that would

go nicely with the slight cinnamon and cardomon flavor.

 

And then some cooked greens or steamed broccoli.

That sounds good. I've never actually done that. Maybe there are recipes

in the file section. I'll look.

Hi Samantha:

 

Instead of curry what about something cooked in yogurt and spices the

yogurt

makes it more of a mild taste.
