SO what I donow is peel & quarter two bags onions, then run them through the food processor and freeze. That way I only have todeal with the " crying jag " once in a while. Although since he still eats meat he always cooks that, as I don't. My husband came up with this dish a few weeks ago when the kids and I were in Chicago for a funeral. He fried up some French fries in the deep fryer and then on top of them he put some meat balls and cheese, then melted the cheese. Of course he has vegeified it for my daughter and me we have it with some veggie non meat balls or the other night with some boca crumbles on it. It was pretty good. My husband whipped up some pierogies for us when I got home last night (at 9:30, argh!) and guess what he did? He was inspired all by himself to add diced tomato and yellow bell pepper to them b/c there was only a little bit of onion in the fridge.
