John Barley-Corn Casserole recipe Hey Cyndy your daughter might like this one

You might know I'd find a good old hippie song title for this dish.

 

" John Barley-Corn Casserole "

 

3 garlic cloves minced

1 cup chopped onions

2/3 cup thinly sliced carrots

1 Tblspn. canola oil

3 cups vegetable broth

1 cup barley

1/4 tsp. sage

1/4 tsp. salt

1/8 tsp. pepper

dash red pepper flakes

2 cups frozen corn thawed

1/2 cup chopped fresh parsley or cilantro (I prefer cilantro myself)

 

Preheat over to 350 degrees

In a skillet over medium heat saute garlic, onion and carrots in oil until crisp

tender.

Transfer to a greased baking dish (2 quart size), add broth, barley, sage, salt,

pepper and dash of red pepper flakes, mix well.

Cover and bake at 350 degrees for one hour.

Stir in corn and parsley (or cilantro) and bake another 15 minutes or until

barley is tender and corn is heated through.
