Baked Lentils

This is quick, simple and good for you....in the oven as I type.

 

3/4 cup lentils

1/2 cup brown rice

2 1/2 cups veggie broth

handful of shredded carrots

1/2 to 3/4 cup chopped onions

1 tspn Italian seasoning

1/4 tspn. garlic powder

1cup shredded cheese (cheddar or your preference)

 

Mix everything but the cheese in an 11 X 7 baking dish. Cover with foil and

bake at 350 for about an hour and 20 mins. or until all liquid is absorbed.

Baking time tends to vary so keep an eye on it. Remove from oven, top with

cheese and bake, uncovered, for another 15 mins. or so until cheese is melted.

This sounds very good and simple. I am always looking for lentil

recipes...since there no need for soaking;) Thanks! Bonus - just

make some great veggie broth.
