Guest guest Posted October 30, 2005 Report Share Posted October 30, 2005 This is quick, simple and good for you....in the oven as I type. 3/4 cup lentils 1/2 cup brown rice 2 1/2 cups veggie broth handful of shredded carrots 1/2 to 3/4 cup chopped onions 1 tspn Italian seasoning 1/4 tspn. garlic powder 1cup shredded cheese (cheddar or your preference) Mix everything but the cheese in an 11 X 7 baking dish. Cover with foil and bake at 350 for about an hour and 20 mins. or until all liquid is absorbed. Baking time tends to vary so keep an eye on it. Remove from oven, top with cheese and bake, uncovered, for another 15 mins. or so until cheese is melted. TM Quote Link to comment Share on other sites More sharing options...
