My Mom's Macaroni and Cheese recipe

You know this is a comfort food. Never can have enough Mom's recipes around.

I'll post my Mom's version too. This is rich and so good.

 

My Mom's Macaroni and Cheese

 

8 to 10 ounces of sharp cheddar cheese

1/2 small green bell pepper

2 eggs

7 to 8 ounces elbow macaroni

1/4 cup butter

2 cups evaproted milk or half and half

1 teaspoon salt

1/2 teaspoon ground black pepper

dash of red pepper flakes

paprika for the top

 

Finely grate the cheese (should be 2 1/2 cups). Seed and finely chop the bell

pepper.

In a small bowl slightly beat the eggs.

Preheat over to 350 degrees and grease a 9 X 13 inch baking pan.

Boil the macaroni until firm done, don't overcook, drain and place in bowl.

Add 3 tablespoons of the butter, 2 cups of the cheese, the bell pepper, eggs

milk, red pepper flakes, salt and pepper to the macaroni. Stir until well

mixed. Transfer to the prepared baking dish.

Sprinkle the remaining 1/2 cup cheese evenly over the casserole. Cut the 1

tablesppon butter into bits and scatter over the cheese topping. Sprinkle with

paprika and bake until top is golden brown, about 30 to 40 minutes.

Remove and let cool for a few minutes and serve.
