This was something that my non veg. Husband would eat.

Group 1

 

2 cups cooked pinto or kidney beans

2 TBS oil

1/2 cup chopped onion

1/4 tsp garlic powder

1 tsp chili powder

1 tsp salt

1 TBS tomato paste

3 TBS water

1/4 cup sliced ripe olives

1/2 cup green pepper chopped

1/4 cuo chopped parsley

1/2 cup chopped celery

 

Group 2

 

2 1/2 cups cold water

1 1/2 cups cornmeal

1 tsp salt

1/2 tsp chili powder

1/4 cup grated cheddar ( or more if desired)

 

Mash the beans. Mix tomato paste with water. In a skillet saute onion in

oil and combine all group 1 ingredients. Let those cook over medium heat; if

the beans were hot to begin with, more then 5 minutes cooking is needed.

Keep stirring the mixture since beans tent to stick to the pan. Adjust

seasoning to taste.

 

Combine the ingredients of group 2 except for the cheese in a heavy pan, and

cook over medium heat until cornmeal thickens and comes to a boil. You have

to stir this constantly or the cornmeal will stick.

 

Grease an 8 X 8 inch pan and spread 2/3 of the cornmeal mixture over the

bottom and sides; then pour the bean mixture into this cornmeal crust and

spread

the remaining 1/3 of the cornmeal on the top. Sprinkle the top crust with

the grated cheddar cheese and cook in a 350 degree for 30 minutes.

 

I don't remember which cookbook I found this in, however this was something

I started making when I first went veg.
