Guest guest Posted October 30, 2005 Report Share Posted October 30, 2005 My Mom gave me this recipe years and years ago when I first moved out. It's rich as heck, and totally comfort food. I made it again today, after forgetting about it for years. I'm drooling at the smell, and can't wait until it's done. Old Fashioned Mac & Cheese 1 small bag macaroni or shell pasta, 454 grams 8 tbsp butter 8 tbsp flour 4 cups milk salt & pepper, about 1/4 tsp each pinch cayenne pepper 1 1/2 lbs cheddar cheese, sharp or combination of sharp and mild, cubed 1/4 cup bread crumbs Turn oven on to 375 degrees. Cook pasta to al dente. Heat milk and butter, and stir flour in, and wisk, wisk, wisk, wisk, until smooth and thickened. In a deep casserole dish, layer pasta, cheese, white sauce, and repeat until three layers have been made. Top with bread crumbs (I didn't have any today, so I toasted a few slices of potato rosemary bread and grated them.) Spray with cooking spray. Bake for 45 minutes, until bubbling.
