" Orange Pineapple Muffin Cake Cake 1 1/2 cups all purpose flour 1 cup whole wheat flour 1/3 cup packed brown sugar 3 tsps. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 (8.25 oz) can crushed pineapple, drained 1/2 cup orange juice 1/3 cup margarine, melted 1/2 to 1 tsp. grated orange peel 1 egg slightly beaten Glaze 1/2 cup powdered sugar 1/2 tsp. grated orange peel 1 to 2 Tblspns. orange juice Preheat over to 400 degrees and grease the bottom only of a 9 inch springform pan or a 9 inch round cake pan. In a large bowl combine flour, wheat flour, brown sugar, baking powder, baking soda and salt. Mix well to blend. In a medium bowl combine all remaining cake ingredients and blend well. Add the flour mixture all at once, stir just until dry ingredients are moistened. Spoon and spread the batter evenly into the greased pan. Bake at 400 degrees for 22 to 27 minutes or until top is light golden brown and a toothpick inserted in the center comes out clean. Cool 1 minute and remove from pan. In a small bowl, combine glaze ingredients, adding enough orange juice for desired drizzling consistency. Drizzle over warm cake. If desired garnish with orange slices.
