Donna Smoky Tortilla Soup 4 Tb. peanut oil 1 med. onion, chopped 4 cloves of garlic, minced 5 corn tortillas, chopped 1 canned chipotle chile in adobo sauce, drained 1 Tb. gr. cumin 1/2 cup light beer 5 lg. tomatoes, chopped 1 sm. bunch cilantro, stemmed 1 quart vegetable broth salt and pepper to taste In a large soup pot heat oil and saute the onion and garlic until tender, 5 mins. Add tortilla strips and saute until soft, 3 mins. Stir in chipotle chile and cumin and cook one minute longer. Stir in beer, and loosen any brown bits from bottom of pot with large spoon. Add tomatoes and cilantro, simmer very low for 10 minutes, stirring occasionally. Add vegetable broth and bring to a boil. Simmer for 30 minutes. In a blender puree soup in batches. Return soup to pot and reheat. Season with salt and pepper. Serve in soup bowls and garnish with chopped green onion tops, diced radishes, sour cream and tortilla chips.
