Smoky Tortilla Soup recipe posting

This was dinner last night. I revised it for we vegetarians. I will certainly

make this again.

 

Smoky Tortilla Soup

 

4 Tb. peanut oil

1 med. onion, chopped

4 cloves of garlic, minced

5 corn tortillas, chopped

1 canned chipotle chile in adobo sauce, drained

1 Tb. gr. cumin

1/2 cup light beer

5 lg. tomatoes, chopped

1 sm. bunch cilantro, stemmed

1 quart vegetable broth

salt and pepper to taste

 

In a large soup pot heat oil and saute the onion and garlic until tender, 5

mins.

Add tortilla strips and saute until soft, 3 mins. Stir in chipotle chile and

cumin

and cook one minute longer.

Stir in beer, and loosen any brown bits from bottom of pot with large spoon.

Add tomatoes and cilantro, simmer very low for 10 minutes, stirring

occasionally.

Add vegetable broth and bring to a boil. Simmer for 30 minutes.

In a blender puree soup in batches. Return soup to pot and reheat.

Season with salt and pepper.

 

Serve in soup bowls and garnish with chopped green onion tops, diced radishes,

sour cream and tortilla chips.

My favorite soups are spicy smooth soups so I will try this soon,

Marsha this doesn't look really hard but could be for me to make but

I don't have no blender anyway so I will print this and see

if one of my sisters will make it during the holidays. It sounds good

and it even has beer in it. Has to be Dos Equis, Pacifica or Corona.
