Guest guest Posted October 28, 2005 Report Share Posted October 28, 2005 Quite a bit of flavor in this good homemade soup. Czechoslovakian Cabbage Soup 1 c. Onion, chopped 3 carrots, coarsely chopped 2 cloves garlic, minced 1 bay leaf 1 tsp. Thyme 8 c. Water 8 c. Coarsely shredded cabbage 1/2 tsp. Paprika 2 cans tomatoes (1 lb. Each) 2 tsp. Salt 1/2 to 3/4 tsp. Tabasco sauce 1/4 c. Chopped fresh parsley 3 Tbsp. Lemon juice 3 Tbsp. Sugar 1 lb. Sauerkraut, rinsed & drained Brown onion, carrots & garlic in a nonstick pan sprayed with Pam, adding water 1 Tbsp. at a time to prevent burning. Transfer to a large kettle. Add next 8 ingredients. Cover & simmer for 1 1/2 hours. Add parsley, lemon juice, sugar & sauerkraut. Simmer, uncovered, for 1 hour. Can be served with a dollop of nonfat sour cream.
