I like the green enchilada sauce and put sliced green onions, chopped cilantro and olives on top. As a vegetarian taking meals to an omnivore family, i have found Italian dishes quite forgiving. i often take stuffed shells, or spinach lasagne rolls, or a rich baked ziti. i always supply a loaf of garlic bread, a tossed salad, and a dessert; like a cake or some cookies, or a pie. With a full meal like this, nobody ever missed the meat or felt cheated or weirded out by unusual foods. Even some simple macaroni and cheese with a vegetable side dish, rolls, and dessert, etc. Can't go wrong with simple and basic meatless meals. i would also vote against the pizza hut certificates, unless you give them for use on a night when nobody could fix them a meal. They will likely use that sort of thing enough during her recovery so as to get sick of take-out.
