Guest guest Posted October 27, 2005 Report Share Posted October 27, 2005 ground annatto or as the Mexicans call it anchiote, it's the spice of Yucatan, you can find it in the Mercado/aLatin store. You can grind it with the pestle or buy the powder. Markets here now carry it in the spice isle. It adds a rich red color and you've probably see annatto listed as ingredients on various jars, etc. A tounch will add color like turmeric does or you can add more to give your dish a good flavor. Popular in some of the Yucatacan sauces or maribades. You mix lime juice, crushed garlic, minced omnion, one diced pepper, chopped cilantro and annatto and you can marinade your tofu steaks in this before grilling or frying. Donna.
