My ex girlfriend gave me this recipe but that was when she was still my girlfriend. I don't think she would give it to me now if I asked her. Broccoli Potato Pancake 1 cup fresh or frozen chopped fine broccoli 1 cup boiling water 3 eggs 2 green onions choped up 2 tablespoons of flour 1/2 teaspoon salt shake some pepper in 1 large baking kind of potato peeled some oil to cook them in In a bowl mix broccoil and boiling water, let stand for 5 minutes and then drain. In another bowl beat eggs and add onions, flour, salt and pepper, mix. Add the broccoil and mix. Just before you cook, finely grate the potato and add to the mixture. In a large frying pan heat some oil until hot, and pour batter about 1/2 cup at a time for each pancake, into pan and brown on both sides. Only takes about 2 or maybe 3 minutes on each side.
