OK I hear all of you laughing at me. LOLThis is always requested by friends and my two nephews. I cut the butter down by using 1/2 butter and half broth to saute the onions. " Perogi Lasagna " 7 potatoes (med to large) I'm the tater queen so I use large 2 large onions 6 o 8 lasagna noodles 1 cup butter (I use 1/2 cup butter and 1/2 cp veggie broth) 1 cup cheese (I finely grate 1/2 cup Jack and 1/2 cup Cheedar soy cheese but use your choice of cheese) 1 12 oz can evaporated milk (I use the savory sauce posted in files) Cook lasagna noodles as directed on box. Cook potatoes and mash, adding cheese to the potatoes along with a little salt. Chop onions and cook in butter (or 1/2 butter and 1/2 broth), until tender but not brown. Preheat oven to 350 degrees and lightly oil or spray a 9 X 13 inch baking dish. Spread two pieces of lasagna on bottom of dish, spread mashed potato and cheese mixture over noodles, then spread onions and butter broth over potatoes, repeat layers one more time, and top with lasagna noodles. Pour canned milk (trust me, use the vegan savory sauce from the files instead). Bake at 350 degrees until sauce bubbles, 30-40 minutes. Cut into squares, sprinkle paprika over top and serve with sour cream on the side. Note** I usually add a chopped clove of garlic to the onions I saute and I sprinkle chopped chives over the squares when I serve it. I also cook 8 noodles and I lay two and a 1/2 noodle across the botton to fill the dish when I do the layers. I have heard of people making perogies this way but I was never quite sure what to do. I Will love to try this way too. You can usually find perogies in the section of the store where they sell french fries. In my store they are on the upper shelves between the fries and the pizza.
