Guest guest Posted October 25, 2005 Report Share Posted October 25, 2005 Bean Soup With Dumplings3 cups water1 can (16 oz. ) kidney beans, rinsed and drained*1 can (15 oz) black beans, rinsed and drained*1 can (14.5 oz) Mexican-style stewed tomatoes1 can (4 oz) chopped green chilies1 package (10 oz) frozen corn, thawed1 cup chopped onion1 cup chopped carrots1 Tbs vegetarian beef bouillon3 garlic cloves, minced1 tsp chili powder1/2 tsp salt1/4 tsp pepperDumplings:1/2 cup flour1/4 cup yellow cornmeal1 tsp baking powderDash of salt and pepper1 egg white, beaten3 Tbs milk1 Tbs vegetable oilIn a saucepan over medium heat, combine the first13 ingredients; bring to a boil. Reduce heat; coverand simmer one hour or until vegetables are tender.For dumplings, combine flour, cornmeal, bakingpowder, salt and pepper. Combine egg white, milkand oil; stir into dry ingredients. Drop into eightmounds onto boiling soup. Reduce heat; cover andsimmer for 15-20 minutes (do not lift the cover).Yield: 8 servings (2 1/4 quarts)*I used 1 1/2 cups kidney beans, and 1 1/2 cups blackbeans that I made ahead in place of the canned beans. Guest guest Posted October 26, 2005 Report Share Posted October 26, 2005 This sounds delicious! Are they the same kind of dumplings that are in beef stew? Are they light and puffy and a bit doughy? I should have been more specific about the kind of dumplings I was thinking of making last night. I was going to try making the veggie dumplings that are on the appetizer menu at just about every Chinese restaurant. Unfortunately the small grocery store on my way home didn't carry the wonton wrappers.
