Right Amy, coconut and curry go together. That would be a good combo.

I'm sure it would change the taste, but I like curry and coconut, so I

thought it'd be fine. I'm sure you could use soy or rice milk too...

but in either case (or even with the coconut milk), you might need to

adjust the amount of broth you use - evaporated milk has about half

it's water removed, so if you use regular " strength " milk of whatever

type, it'll be thinner than the recipe as posted.

 

Another idea would be to use half as much of the milk of your choice,

and maybe add a tablespoon or two of ground oats to re-thicken.

 

But having said all that, it's soup - I'm sure it's flexible! :-)
