I'm sure you could use soy or rice milk too... but in either case (or even with the coconut milk), you might need to adjust the amount of broth you use - evaporated milk has about half it's water removed, so if you use regular " strength " milk of whatever type, it'll be thinner than the recipe as posted. Another idea would be to use half as much of the milk of your choice, and maybe add a tablespoon or two of ground oats to re-thicken.
