Hoppin' John 1 1/2 cups black eyed peas 1 cup chopped onions 1/2 cup chopped celery 1/4 teaspoon red pepper flakes 2 cloves of crushed garlic 2 bay leaves Salt and Pepper as needed couple vegetarian sausages cut in rounds (Boca or Tofurkey make good ones) 1 cup uncooked rice Soak black eyes peas in 6 cups of water or 6 hrs. or overnight. Drain and cover with 5 cups of water. Add onions, celery, pepper, garlic and bay leaves. Bring to a boil and simmer low for one hour. Adjust seasonings. Stir in sausage rounds and rice add a little water if needed, bring to boil, cover and cook 20 mins.on simmer. (remove bay leaves before serving).
