Guest guest Posted October 22, 2005 Report Share Posted October 22, 2005 Old-Fashioned Potato Salad 2 cups diced potatoes, cooked 1/2 cup finely chopped onion 1/4 cup finely cut celery 1 dill pickle, finely chopped 1/2 cup fat-free plain yogurt 1 tbsp. Dijon mustard 3/4 tsp. no-oil herb or Italian seasoning Combine the first 4 ingredients in a bowl. In a small bowl combine the remaining ingredients. Add to the vegetables and mix carefully. Cover and refrigerate for several hrs. to allow the flavors to blend. Makes 6 (1/2 cup) servings.
