Tofu is wonderful to cook with. You can mash it, add spices, use as ricotta in

stuffed shells and lasagna, it takes on the flavor of marinades and sauces.

Maybe your smoothie recipe didn't have enough flavor to begingwith. Not sure.

Try this savory sauce and see what you think. It's easy to make, you can eat it

hot or cold, use as a dressing for a salad or toss with pasta. You can find

nutritional yeast flakes at the health foods store. How about the sweet and

sour tofu recipe in our files? Try something like that to start with.

This is fantastic on a salad, over pasta, on a baked potato, as a dip, hot or

cold and pour it over the brussel sprouts too. It's actually endless. So easy

to prepare.

 

" Savory Sauce "

 

1/2 lb. firm or extra firm tofu (not silken)

3/4 cup vegetable broth or water

1/4 cup canola oil

2 Tablspoons soy sauce

2 Tablespoons nutritional yeast flakes

2 Tablespoons fresh chopped basil or 1 tsp. dried basil

2 Tablespoons lemon juice

1 teaspoon Dijon mustard

1 clove garlic minced

 

Put all ingredients into a blender or food processor and blend.

Okay, one more question. Is tofu one of those things that you either

like or you don't? Or is it more a gradual taste? Just

curious, 'cause we made smoothies the other night and I added some

silken to my smoothie and it seemed to give it an " off " taste? Maybe

used too much? I'm really not sure, but I've been told by alot of

people that you usually can't taste a difference if you add it in a

smoothie or sauce, etc.
