Guest guest Posted October 21, 2005 Report Share Posted October 21, 2005 I usually make one of the sandwich fillings I've posted and eat the endive stuffed but sometimes I make this brasied version. It's delicius and not hard to make at all. The flavor is delicate. " Braised Belgian Endive " 6 small Belgian endive (rinse and cut root end off, don't separate though) 1 1/2 Tblspns. butter 1/2 tsp. sugar 2 Tblspns. fresh lemon juice 1/2 cup veggie broth 1 Tblpsn. herbs ( I use Mrs. Dash or Spike) 1 or 2 Tblspns. chopped parsley or cilantro Heat butter in medium large skillet and add whole endives (don't separate leaves), add also the sugar (brings out the flavor of the endive), veggie broth, and lemon juice. Bring to a boil, lower heat to medium and cover pan, braise endive 3 minutes. Turn 1/4 way around and braise another 3 minutes and do this until you've braised endive all the way around. (12 minutes total). If using large endives it may take a few extra minutes. Uncover pan and raise heat to med. high and add spices and parsley or cilantro. Turn to mix spices and cook 2 more minutes. Ready to serve. Note*** You can add sliced mushrooms in with the start of this dish along with a little chopped onion and a minced garlic clove to if you desire.
