Guest guest Posted October 21, 2005 Report Share Posted October 21, 2005 Southwestern Hash 2 cups diced unpeeled potatoes 1 Tbl. oil 1/2 cup chopped red bell pepper 1/2 cup chopped onion 1 or 2 garlic cloves minced 2 cups frozen Crumbles (slightly thawded) or TVP reconstituted to make 2 cups 1 4.5 ounce can of green chiles chopped (mild Ortega or hot Jalapeno) 1/4 tsp. salt 1/4 cup chopped cilantro Optional - if you want to add some frozen corn Place potatoes in saucepan with water and boil for 8 to 12 minutes until fork tender but not mushy, and drain. Heat oil in large skillet over medium heat. Add bell pepper, onion and garlic, cook and stir until crisp tender. Stir in potatoes,and all remaining ingredients except cilantro. Cook 8 to10 minutes until potatoes begin to brown, stir frequently. Turn off heat and stir in cilantro, and serve. This makes 4 (1 cup) servings FareChase - Search multiple travel sites in one click.
