I don't mind since the wife does most of the weekday cooking and these are easy as well as flavorful and very addictive. Safari Sandwiches 2/3 cup mayonnaise (I do use a vegan version) 3 tablespoons of chutney, chow chow, mild salsa or pickle relish 12 oz of packaged veggie lunchmeat, cut into slices 1 can (20 oz) of drained pineapple slices 2 tablespoons of butter or margarine 4 onion rolls, split and toasted (actually any good roll will do) 2 ripe avocados, sliced Mix mayonnaise and chutney (or whichever you select to use) together in a small bowl and set aside. Saute the pineapple and veggie lunchmeat in butter until both are lightly browned. Spread a tablespoon of mayonnaise mixture on each roll, place sauteed lunchmeat on rolls and top with pineapple and then place avocado slices on top, sprinkle a dash of salt on avocado and top with other half of roll.
