This is from " Carb-Conscious Vegetarian " by Robin Robertson

Many easy to prepare light recipes in this book.

 

Guacamame

 

1 cup fresh or frozen shelled edamame, cooked (soy beans)

1 small avovado, peeled and pitted

1 4 oz. can chopped green chiles (mild) drained

2 tsps. fresh lime juice

1 Tb. onion finely chopped

1 tsp. garlic, chopped

1 tsp. ground cumin

salt, to taste

Freshly ground pepper, to taste

Assorted raw vegetables for dipping

 

In a blender or food processor, combine edamame, avocado, chiles and lime juice.

Process until smooth. Add onions, garlic, cumin and salt & pepper.

Pulse to blend, leaving some texture. Transfer to a serving bowl and serve with

raw vegetables.
