Guest guest Posted October 20, 2005 Report Share Posted October 20, 2005 Avocado Chili and Pasta Side Dish 1/2 lb uncooked spaghetti 1 avocado, diced in small cubes 1 tablespoon lime or lemon juice 1 15 ounce can of vegetarian chili 1/3 cup chopped onions or green onions with tops 2 tomatoes, diced 1 teaspoon minced garlic 1/3 cup chopped cilantro Boil pasta pasta and drian, set aside. In a small bowl combine avocado with lime or lemon juice. In a small sauce pan saute garlic in a tsp. of oil and add chili to heat. Serve pasta topped with hot chili, sprinkle onion, tomatoes, and cilantro over dish and top with avocado.
