Guest guest Posted October 19, 2005 Report Share Posted October 19, 2005 Marinated Cucumber Salad 1/2 cup Italian dressing (low-calorie) 1/8 teaspoon pepper 1 medium cucumber, peeled and thinly sliced 1/4 cup radishes, thinly sliced 2 tablespoons fresh parsley, chopped Combine Italian dressing and pepper in a medium bowl; stir well. Add cucumber, onion, radishes, and parsley. Toss gently to coat. Cover and marinate in refrigerator for at least 4 hours. Like corn on the cob, marinated cucumbers mean it's summertime. When my husband tasted them he dubbed them Quickles, which is a perfect name for them, because that's exactly what they are. 1/3 cup *distilled white vinegar* 2 T *water* 2 T *sugar* 1 T finely chopped *fresh dill* (more is OK) 2 tsp *salt* 1/8 tsp freshly *ground white pepper* 3 medium *cukes*, peeled, sliced very thin (thinly sliced sweet *onions*) Whisk all ingredients until sugar dissolves. Toss cukes and refrigerate covered at least four hours. Note that if you have a mandoline slicer (or a fake one, like I do, but which seems to work just as well as the ones that cost several hundred bucks), slicing will be a lot speedier. Plus, the thinner the slices the better. You can slice the onion on the mandonline, too.
