A variation on that theme:

*Quickles*

This was one of my favorite dishes as a kid. Like corn on the cob, marinated

cucumbers mean it's summertime. When my husband tasted them he dubbed them

Quickles, which is a perfect name for them, because that's exactly what they

are.

1/3 cup *distilled white vinegar*

2 T *water*

2 T *sugar*

1 T finely chopped *fresh dill* (more is OK)

2 tsp *salt*

1/8 tsp freshly *ground white pepper*

3 medium *cukes*, peeled, sliced very thin

(thinly sliced sweet *onions*)

Whisk all ingredients until sugar dissolves. Toss cukes and refrigerate

covered at least four hours.

Note that if you have a mandoline slicer (or a fake one, like I do, but

which seems to work just as well as the ones that cost several hundred

bucks), slicing will be a lot speedier. Plus, the thinner the slices the

better. You can slice the onion on the mandonline, too.
