I'll have to guess on the quantities as I just poured stuff in and mixed until the right consistency. 1/2 package of LightLife brand SmartGround 2 eggs, whisked 1/2-1/3 c bread crumbs 1/4 c (maybe more) parmesan cheese (I used that powder stuff from Kraft) couple tablespoons of Italian seasoning 1/4 c ground flax Crumble the grounds and mix in the eggs, then add the rest of the ingredients. Add more of whatever until you get a mixture that is moist and will bind. Roll tablespoons of mixture into balls and fry in your favorite oil. Keep turning so each side gets crispy. Boil your favorite pasta and heat up your favorite sauce. Lay out pasta on a plate, top with meetballs, pour on sauce and top with freshly grated parmesan and fresh ground pepper. In the future if you're ever pressed for time or don't want them fried, look in the freezer section for the Quorn " meat " balls. Guest guest Posted October 18, 2005 Report Share Posted October 18, 2005 Actually, I was surprised at how little time these took to make. Dinner was ready in half an hour. I did try some premade balls from LightLife and they were really good. I just found that our grocery store is carrying two Quorn products, the breaded patties and the breaded nuggets. They are $4.89 a packet!! I'll need to talk to the manager about getting the other styles, like the naked cutlets. I've tried Quorn grounds before and my digestive system didn't take too well with them. So, I stick to their " chikn and turky " products. I also didn't fare well with their premade lasagna (again, the grounds). I've only had success with the LighLife brand. Have you ever tried their meetballs? Guest guest Posted October 18, 2005 Report Share Posted October 18, 2005 I haven't, but I definitely will as I do love a good fake meatball. ;-) I know a lot of people have stomach issues with Quorn, so it's no surprise that some of their products didn't agree with you.
