Guest guest Posted October 17, 2005 Report Share Posted October 17, 2005 I'm back in Chicago and busier than ever. Here's a favorite quick dinner of mine and packed with protein. TVP Chili Sin Carne 6 ounces of TVP (soak in a bowl of boiled water for 10 minutes and drain) 1 tablespoon oil 1 onion chopped 1 red bell pepper chopped 1 green bell pepper chopped 1 or 2 cloves of garlic minced 1 14 ounce can of stewed tomatoes, chopped 1 teaspoon of mixed herbs of your choice (Mra. Dash works for me) 2 teaspoons of chili powder 1 14 ounce can of pinto beans (not refried ) don't rinse but drain or use kidney beans rinsed since they are kind of sweet. salt & pepper to taste Heat oil in large frying pan and saute onion and garlic 2 to 3 mins. Add TVP and peppers and cook 2 more minutes. Mix in tomatoes, herbs, chili powder, beans and salt and pepper. Bring to a boil and cover pan, simmer for 20 mins.
