So Thank you all for the avacado recipes that have been posted. I've been printing them off with drool dribbles he he he Heather G > This is always accepted with big smiles and I usually make two of them. > > Avocado Pie > > 1 1/2 cups Mexican salsa in mild,medium or hot > 2 large ripe avocados > 1 envelope of ranch style dressing mix > 2 teaspoons of lemon juice > 1/2 cup sour cream > 1/2 cup mayonnaise > 1 bunch of green onions chopped, include the tops > 1 4 ounce can of chopped black olives > 1 cup shredded Jack cheese > 1/4 cup chopped cilantro or parsley > Tortilla chips for serving > > Place salsa in a colander to drain. > Cut avocados in half and remove pits, scoop avocados into medium bowl. Mash with a fork until fairly smooth. Add ranch dressing mix and lemon juice and stir to blend well. > In a small bowl mix sour cream and mayo. > To assemble, spread mashed avocado on bottom of an 8 inch glass pie plate. > With a spatula, cover evenly with sour cream mixture. Spread drained salsa over the sour cream mixture. Cover with green onions, then chopped olives, then Jack cheese.
