Guest guest Posted October 16, 2005 Report Share Posted October 16, 2005 perfect for starving students also kids really love them - even picky ones ----------- Rice and Bean Casserole 1 can red kidney beans drained 1 can white kidney beans draine 1 cup rice 1 can italian tomotoes grated cheese (I like a good cheddar) 1 green pepper 1 red pepper 1 onion chopped a good clove of garlic cumin corriander currie hot peppers/ hot sauce (if desired) fry onion and garlic add beans rice and tomoatoes, reduce heat add spices and simmer till rice is cooked it tomato juice transfer to casserole dish add grated cheese on top cover and bake at 350 till crispy (about 20 min) let cool a bit and enjoy ---- Shepherd's Pie 1 can brown beans in tomato sauce 1 can lentils, drained 1 onion, chopped 1 cup frozen, or 1 can peas and carrots drained 1 cup frozen or 1 can corn drained a lot of mashed potatoes 1 cube or 1 spoonfull veggie soup base powder garlick, salt, pepper, chili powder, basil, oregano, mustard powder,etc.... 1 prepare mashed potatoes 2 fry onion, 3 add beans and lentils, fry at med heat 4 stir in soup base, herbs, spices, etc... 5 transfer into casserole dish 6 add layer of peas and caoorts 7 add layer of corn 8 add layer of potatoes 9 cover and cook in over at around 350 for 20 minutes 10 remove and cool my trade lists http://www.geocities.com/realshows my launch radio station http://launch./lc/?rt=0 & rp1=0 & rp2=1281193352 Music Unlimited Access over 1 million songs.
