Guest guest Posted October 15, 2005 Report Share Posted October 15, 2005 Plantains (looks like a big black or green banana and is related to the banana family) are very overlooked in our cuisine. Now when you buy a plantian make sure it's almost black. They have a very thick skin and are not as sweet as our everyday banana. When you make a spicy soup the contrast of flavors will really burst through if you toss plantains into the soup pot. Take the plantain and wash the outer skin (do not peel) and cut into thick circles about 2 inches in thickness. Toss them into the soup to cook with the peel on. They will not mush and fall apart nor will they be as sweet as our daily bananas we eat. Really adds a delicious taste to your soup. Must make sure the skin is almost black in color for the plantain to be ready for use. They are especially good in posole, black bean soup, etc. Any spicy type soup.
