I love to roast red peppers and toss into dishes or make to make dips and hummus with. I cut the stem from the pepper and stick a fork or metal kabob skewer through the pepper starting at the top lengthwise. I turn the stove burner on high and sit the pepper on it. As the skin blackens I turn the pepper. I leave it on the burner until it's completely black and then toss it in a small brown paper bag and fold shut for 10 mins. It will steam in the bag and the skin will rinse right off under running water. Your pepper will be fire roasted and delicious and ready to use. You can do this in an iron skillet also. The oven method takes way to long for just a pepper. My sister roasts all her HOT peppers in the iron skillet the same way.
