They're just sweet enough to satisfy a sugar craving but also good for you! 1/4 cup ground flax seeds 1 1/2 cups whole wheat flour 1/2 cup brown sugar 2 teaspoons baking powder 1/2 tspn baking soda 1/2 tspn. cinnamon few shakes of apple pie spice 1/2 tspn salt 1/4 cup egg substitute (or one whole egg) 2 apples finely chopped (I used Cortlands) 3 tablespoons canola oil 1/2 cup unsweetened applesauce 1/2 cup milk 1/2 cup chopped walnuts Blend dry ingredients in a bowl. In a separate bowl combine egg, oil, milk and applesauce. Add liquid ingredients to dry. Add nuts and apples Stir until just blended Fill 12 small or 6 large muffin cups 2/3 full and back at 400 for 20 minutes or until muffins test done.
