Guest guest Posted October 13, 2005 Report Share Posted October 13, 2005 OK get your chain-saw out.LOL Actually take the squash and get a sharp butcher knife and cut it in half widthwise and then cut those two pieces in half again widthwide. Now cut those pieces in half lengthwise and scoop out the seeds from the bottom two parts. Place squash in the steamer (pulp side down and you can layer it) and steam until soft. The inner pulp will scoop out of the skin when done. Do not try to peel this squash raw. It is way too hard plus there's some type of a sap that gets on your hands and doesn't feel comfortable, feels like your hands have aged 30 yrs. Are you going to make this bread? No one believes it's squash and it makes 2 loaves. One for you and one to give to a friend. Butternut Squash Bread 2 cups mashed cooked butternut squash (I cut in large chunks and steam) 1 cup canola oil 2 cups sugar 3 eggs beaten 1 tsp. vanilla 3 cups flour 1/4 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2 tsp. cinnamon * optional 1 cup chopped pecans or walnuts Preheat oven to 350 degrees, and grease two 8 1/2X4 loaf pans. In large mixing bowl combine, squash, eggs, sugar, vanilla and oil, and blend. In a separate bowl mix all the dry ingredients (except walnuts) and add to the wet ingredients. Stir until just combined. Fold in nuts. Pour into prepared pans and bake until toothpick inserted comes out clean. 60 minutes. Cool 10 minutes on wire rack.
