Guest guest Posted October 13, 2005 Report Share Posted October 13, 2005 Hi Jane, first off get a good salt. It's well worth the investment, it really brings out the flavor. I use Celtic sea salt. Believe me you will notice a difference and now I know why a chef told me to do that 20 yrs ago. Saute a little finely chopped celery, chopped cilantro, chopped shallot and minced garlic and toss in the soup. When I make a veggie soup I always include a little chopped fresh cilantro, it won't make your soup taste like raw cilantro. A dash of white pepper will help too. Believe me, it only takes a pinch and our food will burst with flavor. I can't cook without it. Donna, I did look in two different stores for celtic salt, last time you mentioned it, but didn't find it. I'll probably have to go to a store with a bigger specially section.
