Guest guest Posted October 12, 2005 Report Share Posted October 12, 2005 And now for my favorite salad: 3 tablespoons raspberry vinegar 1 tablespoon sugar 1/3 cup light olive oil 1 tablespoon sour cream 1 tablespoon Dijon mustard 1/2 cup fresh or thawed raspberries toasted chopped walnuts lettuce (My mom makes it with Boston Bibb lettuce, but I don't like that one so I just use my favorite red leaf. I don't think it really matters which you use.) Whisk together vinegar, sugar, oil, sour cream, Dijon, 1/2 the berries. Arrange lettuce on plates (in ripped bite-size pieces). Top lettuce with toasted nuts and the remaining berries. Drizzle dressing on top. Makes 6 salads. It's to die for. I lick my plate after it. I could eat it for dessert. That's how much I love it.
