Autumn Gingered Yam and Apple Bake 3 yams 2 large gala or delicious apples 1/4 cup butter salt, gr. cinnamon, gr. nutmeg and gr. ginger to taste (I toss a dash of cardamom in this dish) 1 cup apple juice Scrub yams but don't peel. Bring a large pot if water to a boil and boil yams until just barely tender about 20 mins. if small yams boil about 15 mins. Drain well and cool. Peel off skins and cut into 1/4 inch thick slices. Peel and core the apples and cut into slices. Preheat oven to 325 degrees. Grease a 9 X 13 inch baking pan. Layer half of the yam slices in baking dish, overlapping them slightly. Top with half the apple slices. Sprinkle with salt, nutmeg, cinnamon and ginger. Cut the butter in very small pieces and dot the layer. Repeat with yams, apples, spices and butter. Pour the apple jiuce evenly over surface. Bake uncovered until apples and yams are tender when pierced with a fork and top is golden brown, about 20 - 30 mins. Note : as dish bakes redistribute the juices with a spoon over top to mositen and flavor all areas. " I guarantee you, this place will blow your mind.
